Fermentation and refined in steel only, to preserve the distinctive richness that is derived from a soil once submerged by the sea, and is laden with seashells and marine fossils. Ruby red with hints of cherry, blackberry, rose, pepper and graphite.  The resulting wine is one of great freshness and drinkability.
