The cocciopesto is a material created by the Ancient Romans to cover large spaces, such as aqueducts or thermal environments, so as to make them waterproof. Nowadays, this material is still used for different purposes, one of these is the vinification and aging of wines. We have decided to use it for our Vermentino which is housed in a Cocciopesto amphora for a whole year. The wine benefits from the porosity of the material which allows oxygen to come into contact with the wine enough to enrich the wine without damaging it.
